Sourdough Discard Skillet Pizza with Chicken, Broccoli & Red Peppers

A smart, no-yeast pizza that uses your sourdough discard to create a quick, crispy skillet crust, topped with chicken, veggies, and bubbling cheese.

 

Ingredients

 

  • Crust & Pan Prep

     

    • 5 large scoops sourdough discard

    • 1 Tbsp garlic‑infused olive oil

    • ~¼ cup water (add more if needed)

    • Olive oil (to coat the skillet)

    • 1 cup cooked chicken (diced or shredded)

    • 1 cup broccoli florets (lightly steamed)

    • ½ cup diced red bell pepper

    • ½ cup Alfredo sauce (homemade or store-bought)

    • 1 cup shredded mozzarella cheese

    • Fresh spinach

    • Mushrooms, black olives, Parmesan, or herbs like basil 

 

Instructions

 

1. Preheat Skillet & Oven

Coat a cast-iron skillet generously with olive oil. Place it in your oven and preheat to 450°F (230°C). Heating both the pan and oven ensures a crispy, golden crust  .


2. Mix the Batter

In a bowl, whisk together sourdough discard, garlic-infused oil, and water until smooth and pourable, about the consistency of thin pancake batter. Add a splash more water if needed  .


3. Form the Crust

Carefully pull the hot skillet from the oven. Pour in the batter and tilt the skillet to spread it evenly. The hot surface will immediately start crisping the base  .


4. Add Toppings

Layer Alfredo sauce across the crust, then top with chicken, broccoli, and red peppers. Sprinkle mozzarella cheese on top. Feel free to get creative with optional additions like fresh herbs or olives  .


5. Bake

Return the skillet to the oven and bake for 8–10 minutes, until the cheese is melted and bubbly with slightly browned edges  .


6. Rest & Serve
